Ingredients

For the Nachos:-
60 gms. Whole Wheat Flour
50 gms. Cornmeal
¼ tsp. Cumin Powder Salt as per taste
2 tsp. Vegetable Oil

For the Sauce:-
1 tsp. Butter
1 tsp. Maida
¼ tsp. Paprika Powder
¼ cup Milk
¼ tsp. Salt

For the Assembly:-
Chopped Onion Chopped
Tomato Grated
Mozarella Cheese

Method

The Nachos:-
In a bowl mix, flour, cornmeal, cumin powder, salt and vegetable oil. Knead a soft dough of this using warm water. Once the dough is ready cover it with a damp cloth and keep aside for 10-15 minutes.
After that cut the dough in 6 equal parts and flatten it with a rolling pin into a thin circle of 6″-7″ in diameter. Prick the flattened dough with a fork. Then roast the dough on the tawa for 1-2 minutes on each side. Once roasted cut into 8 portions with a knife. Place the tortillas on a baking tray apart from each other and bake these in a preheated oven at 180°C for 12-15 minutes.

The Sauce:- In a saucepan heat butter and add maida to it. Then add paprika and cook on low heat for a minute. Now add the milk and keep whisking. Add salt and keep whisking.

The Assembly:- In a baking dish arrange Nachos as the base, then the cheese sauce, onion, tomatoes, mozarella cheese, again the sauce followed by onions and tomatoes, mozarella cheese, green and black olives and bake this in a preheated oven at 180°C for 7-10 minutes or until the cheese melts. Cheesy Loaded Nachos are ready to serve!
