Ingredients

For Brinjal & Potato Layer:
• 1 whole Eggplant (cut into slices)
• 2 Potatoes (peeled & sliced)
• ¼ tsp Salt
• Oil (for frying)

For Red Sauce:
• 1 tbsp Olive Oil
• 2 tsp Chopped Garlic
• 3 Spring Onions (sliced)
• 3 Spring Onion Greens (chopped)
• 4 Purée Tomatoes
• Salt (as per taste)
• Black Pepper Powder (as per taste)
• 1 tsp Red Chilli Powder
• 2 tbsp Ketchup
• 4–5 Basil Leaves (hand torn)
• Water (as required)

For White Sauce:
• 1 tbsp Olive Oil
• 2 tbsp Wheat Flour
• 1 cup Milk
• ½ cup Milk + ½ cup Water
• 1 tsp Salt
• 1 tsp Black Pepper Powder
• Spring Onion Greens (chopped)

For Assembly:
• Mozzarella Cheese (grated)
• Olive Oil (for greasing)
• Breadcrumbs (as required)
