Vermicelli Soup – Healthy & Nutritious Soup Recipe – Ruchi’s Kitchen

100g Rice Vermicelli,
3 to 3 1/2 tbsp Cornflour,
2 Tsp Soya Sauce,
2 Tsp Chilli Sauce,
1 1/2 Tsp Chilli Oil,
100g Carrots,
1 Tbsp Brown Vinegar,
100g Cabbage,
10 Spinach Leaves,
Some Broccoli Florets,
6 cups of vegetable stock,
1 tsp Sugar,
Salt to taste


– Heat some oil and once the oil is hot, add thinly sliced carrot, cabbage, few broccoli florets and few spinach leaves.
– Add vegetable stock.
– Add soya sauce, chilli sauce, vinegar, sugar, salt.
– Mix cornflour in water or vegetable stock.
– Add the cornflour mixture to the soup when it comes to boil.
– Allow the soup to boil for 3 to 4 minutes.
– Fry some rice noodles in oil.
– Serve the soup hot and place the vermicelli on top.
– Sprinkle chilli oil on the top.
– The delicious soup is ready to eat!
