Zarda Pulao or Meethe Chawal is a sweet rice preparation, deliciously infused with cardamom and saffron. A family favorite, this recipe is a great dessert and is quite easy to make as well.
The zarda rice is significantly popular dessert in Pakistan and Bangladesh also. This is extremely easy to make a dish but yes, it does require a couple of critical ingredients to make the authentic zarda recipe.

Zarda Pulao
2 Cups Basmati rice
1 bay leaf
4 nos green cardamom
6 nos cloves
2 inch cinnamon stick
5 cups water
1/2 tap food-grade yellow/ orange color
1.5 – 2 cups Sugar
A generous pinch of saffron
15 nos Cashew nuts
4 tbsp Raisins
3 tbsp Dried Coconut sliced
4 tbsp Ghee
1/2 tsp lemon juice (optional)
Method
Methods: First, let’s heat up the water in a stockpot with Salt now let the water boil in the high flame. Next add Food grade yellow/ orange color, Rice (washed & soaked), now stir it for a few moments. Next off the flame and transfer into the strainer to strain the Rice. Now let’s make the Tempering for which add Ghee in the Pan with Cinnamon Stick, Cloves & Green Cardamom, Bay Leaf, Dried Coconut (sliced) next saute for 30 seconds till it turns to golden color. Then add Cashew Nuts & Raisins saute it again for 30 to 40 seconds. Now lower the Flame and add in Pre cooked Rice and Sugar (as shown in the Video) mix it properly together. Finally, add Safron on the top with Lemon Juice and mix it again. Next, let it cook with lid closed for 10 minutes on medium flame and your Zarda Pulao is ready to serve.
