Ingredients
Vegetables 10-15 nos Tendli/ Ivy Gourd 8-10 nos,
Okra 1 medium sized onion, cut in rings 150 grams paneer,
10-15 soy chunks
For the Batter
200 grams Refined flour,
20 grams rice flour/ corn flour,
1 tsp haldi ( turmeric ),
Salt to taste,
1 tbsp red chilly powder,
1 tbsp garlic, chopped,
1 tbsp ginger, chopped,
1 tbsp curd,
1/8 tsp red colour ( optional),
80-100 ml water Vegetable,
oil for frying,
For the tempering,
2 tbsp vegetable oil,
1 tbsp mustard seeds,
10-15 curry leaves,
2 large onions, cut into rings
Method
– Slice the tendli & lady finger length wise – Cut onions in ring shape, cut paneer length wise
– Retain the soya chunks in hot water
– In bowl add Refined flour, rice flour/ corn flour, salt, turmeric, red chilli powder, garlic, ginger, curd, red color and stir all the ingredients together and add little water
– Dip each vegetable in the batter and then in frying pan
– Squeeze the water out of soya before dipping in the batter For Tadka
– In a pan add oil, mustard seeds, curry leaves and onion rings and all the fried vegetables
