Ingredients
3 cup Regular Idli Batter,
1/2 cup Carrots,
Salt,
Eno,
Fruit Salt,
1/4 cup French Beans,
1/4 cup Green Peas,
2 tbsp Coriander and Mint Chutney,
1 tbsp Butter,
2 cloves,
Garlic,
Ghee,
Molaga,
Podi Powder (Gun Powder),
Method
Boil some water in a pressure cooker but if you have a idli steamer you can use it. For Orange Idli Take 1 cup regular idli batter, add half cup finely chopped carrots, salt, 1/4 tbsp eno fruit salt and mix well. Grease the mini idli stand with oil and add 1 tbsp of batter into the moulds. For Green Idli Take 1 cup regular idli batter, add 1/4 cup of finely chopped french beans, 1/4 cup of green peas, salt, 1/4 tbsp eno fruit salt, 2 tbsp of Coriander and Mint Chutney mix this batter nicely. Take another tray of mini idli stand and add 1 tbsp of batter into the moulds. For White Idli Take 1 cup regular idli batter, add some salt and eno fruit salt and mix well. Fill the moulds of the tray with the white batter and arrange the mini idli stand properly and place it into the pressure cooker cover it with the lid and do not put the vent part. Let the idli steam for 12 mins on high flame. For Galic Infused Butter Microwave 1 tbsp of butter for 1 min and add 2 cloves of finely chopped garlic and let it infuse for 10-15 mins. Open the lid of the cooker and remove the stand out, separate the plates out and let the idlis cool down for 2-3 mins before you remove it from the moulds. Apply the garlic infused butter on the plain idlis. Scoop out the carrot idlis. Heat a little bit of ghee in a pan and add some ready made Molaga Podi Powder and saute it for a minute and add the idlis in it and mix well. The delicious Tricolor Idli is ready to be served.
