Ingredients
300 gms. ripe tomatoes, chopped
¾ cup Thick sev/gathiya (plus some for garnish)
3 tbsp. Ghee
½ tsp. Mustard seeds
1 tbsp. Ginger-Garlic-Green Chilli, crushed
½ tsp. Cumin seeds
1 generous pinch of Asafoetida
¼ tsp. Turmeric powder
½ tsp. Red Chilli powder
1 tbsp. Coriander powder
1 tsp. Sugar/ Jaggery
½ cup water
Coriander leaves for garnish
Salt as required
Method
– – Heat oil and ghee in a wok.
– Add mustard seeds, cumin seeds, crushed ginger-garlic-green chilli and a generous pinch of asafoetida.
– Stir and add in chopped tomatoes, salt and let it stew on low flame for 12-15 minutes.
– Then add turmeric powder, red chilli powder, coriander powder, jaggery and water.
– Cover this and cook it on low flame for 3 minutes.
– Then add the sev/gathiya and turn the flame off.
– Garnish with coriander leaves and Sev Tamatar Ki Sabzi is ready. Kathiyawadi Sev Tomato Sabzi is ready to serve! HAPPY COOKING!!!
