Makai Khichdi – Corn Rice – Indian Rice Variety Recipe By Ruchi Bharani

Ingredients

1/2 cup rice,
1.5 cups corn (half crushed),
1/2 cup peas,
1/2 cup milk,
3/4 cup water,
1/2 tsp ginger chilli paste,
1 tsp sugar,
1 tsp garam masala ,
1/4 cup grated coconut,
Salt,
1/8 tsp turmeric powder,
Coriander leaves (chopped)

For Tadka:
2 tbsp ghee,
2 pcs each (cinnamon, cloves, cardamom & bay leaves),
Boriya chillies

Method

– Add ghee in a hot pressure cooker and add whole spices and boriya chillies
– Stir the tempering and add corn to it
– Cook the corn for a minute and add green peas to it
– Add rice, ginger chilli paste, sugar, garam masala, turmeric powder, grated coconut, salt, coriander leaves and mix everything well.
– Add milk, water to it and mix everything well
– Cover the pressure cooker with lid for 3 whistles on high flame
– Let the pressure cooker cool completely before opening the pressure cooker.
– Give a final mix and serve hot
