Ingredients
– 2 cups chopped vegetables (carrots, beans, peas, cauliflower or any of your choice)
salt as required
3 cups water
1½ cups basmati rice (washed and soaked in cold water for 15 minutes)
2 tbsp ghee
½ tsp cumin seeds
1 small onion sliced
5-8 cashew nuts
For Potli spice mix:-
1 Bay Leaf
1 Star Anise
1 large strand of mace
2 green cardamoms
2 green chillies
1 black cardamom
4 cloves
5-6 peppercorn
1-inch cinnamon stick
1 tsp fennel seeds
2 green chillies
2 cloves of garlic
2 cm piece of ginger Muslin

Method
– In a muslin cloth tie the spice mix ingredients tightly.
– In a pan heat ghee and add cumin seeds, onions, salt and cook till golden brown on a moderate flame.
– Add in the cashew nuts, chopped vegetables, green peas, water, salt and the spices tied in the muslin cloth (Potli).
– Once the water starts boiling, add in the rice and stir very gently. Allow this to boil on high flame for 10-12 minutes.
– Once the water evaporates, lower the flame and cover with the lid and let it cook for 8-10 minutes.
– Discard the spice mix bag (Potli) carefully. Vegetable Pulao is ready to eat! HAPPY COOKING!!!
