How To Make Veg Cheese Burger | Veg Cheese Burger Recipe | The Bombay Chef – Varun Inamdar

Ingredients

For caramelised onions:-
1 tsp oil 1 medium onion sliced
1 tbsp sugar Pinch of salt
1 tbsp vinegar Half cup water

For the patty:-
2 large grated potatoes boiled
1 grated carrot
½ cup fresh boiled peas 1onion, finely chopped
1 teaspoon ginger garlic green chilli crushed
1 tsp cumin seeds 1/2 teaspoon coriander powder
½ teaspoon red chili powder
1/2 teaspoon garam masala powder
1/2 teaspoon turmeric powder
Salt as required
2 tablespoon oil for pan frying

For the coating:-
3 tablespoon wheat flour
3 tablespoon corn flour Salt as required
6 tbsp water

For breadcrumbs coating::-
1/2 cup bread crumbs

For Salsa:-
1 cup yellow corn -roughly chopped
1 tomato – finely chopped
1 jalepeno – thinly chopped Freshly chopped coriander
2 tsp lemon juice Salt as required
For the assembly:- 3-4 burger buns
1 tbsp butter
1 cucumber thinly sliced
2 tbsp mayonnaise Cheese slices Assorted
lettuce leaves Tomato ketchup

Method

Caramalised Onions:- Heat the oil in a pan and add the onion slices to it. Saute the onions on medium flame till they are transluscent and then add the sugar.
Add salt and keep frying the onions till brown in colour. Once the onions are properly caramelised lower the flame and add white vinegar. Give it a quick stir and add water.
Let it simmer till onions are soft and the entire mixture has dried up completely. Let the caramelised onions cool down to room temperature.

Patty:-
Heat the oil in a pan add the finely chopped onion to it. Let the onion turn transluscent and add cumin seeds, crushed ginger-garlic-green chillies and stir it well for a minute.
Then add carrots and green peas and saute for a while. Now add garam masala, turmeric powder, red chilli powder, coriander powder and salt as per taste.
Fry this on moderate flame for a minute.
Turn the flame off and allow this to cool completely. Add the cooled patty mixture to grated potatoes and mix both of them with your fingers. Once mixed properly, take a handful of the patty mixture and press it down to make a patty shape.

Salsa:- Cut the boiled corn, tomatoes, jalapeno/green capsicum and coriander leaves and put all this in a bowl.
Add lemon juice and salt and mix it evenly. Keep the bowl of salsa in the refrigerator to chill.

Breadcrumbs Coating and Frying:-
Take wheat flour, corn flour, salt and water in a bowl and mix it to form a lump-free batter.
Take the patties and dip them into the batter and then in the breadcrumbs one by one. Let the coated patties chill in the refrigerator for 10-15 minutes. Take oil in a vessel and fry the chilled patties in the oil on high flame till brown in colour.
Take the patties out of the oil and let the excess oil drain. Place a slice of cheese on the patty while the patties are still hot.

Toasted Buns:-
Cut the buns in even halves and apply butter on both sides and toast the buns on a pan.

Assembly:- Place one half of the bun on your plate and apply butter, some mayonnaise and tomato ketchup.
Place assorted lettuce leaves on top of it. Then place the cheese topped patty on top of the lettuce leaves and add the caramelised onions.
Top it off with cucumber and the corn-salsa mix. Finally top it off with remainder half of the bun and your delicious Veg Cheese Burger is ready to serve!
