Ingredients
1 litre milk (unskimmed) Lemon Juice
1 tsp. Salt
1/2 or 1 tsp. Yogurt
Method
Take 1 litre of full fat milk in a heavy bottomed pan and bring to a boil. Once the milk boils, reduce the heat and add Lemon Juice to it and stir. Keep adding the lemon juice until the milk starts curdling.
Take a muslin cloth and strain the curdled milk in it and let it cool for 30 minutes. After the curdled milk has cooled down add 1 tsp.
salt to it and put it in a blender/mixer.
Give it a spin and check for creamy texture.
Tip:- If the mixture is not creamy enough add half or 1 tsp. Yogurt to it and spin it again. Your substitute for cream cheese is ready.
