Ingredients
1 &1/2 cup steamed Vegetables (Potato, Cauliflower, French Beans, Carrots)
1/2 cup Tomato Puree
3/4 cup Coconut Milk
1/2 cup grated Coconut
4 Chopped Green Chillies Curry Leaves
1 & 1/2 tbsp Tamarind Paste
1 tsp Garlic Paste
1 tsp Coriander Powder
1/2 tsp Cumin Powder
1/2 tsp Mustard Seeds
1/2 tsp Turmeric Powder Coriander Leaves Salt
1 big Onion Grated
1 & 1/2 tbsp Oil
1/2 tsp Ginger Paste
Method
– Put oil in a heated pan, add mustard seeds to it. – Once the mustard seeds starts crackling, put curry leaves in it and stir fry. – Add the grated onion and saute the onion for about a minute. – Now add garlic paste, ginger paste and fry the whole mixture till its light brown in color. – Add the green chillies, tomato puree and mix everything well. – Add cumin seeds, coriander seeds, turmeric powder, tamarind paste and cook all of these ingredients together for about 4/5mins. – Add 1/2 cup of water and cook it in low flame for few mins – Add the coconut milk and mix well. – Add salt and grated coconut and steamed vegetables and stir to mix everything well. – Add some more water and coriander leaves to garnish and the dish is ready to be served.
