Ingredients
1 & 1/2 cup steamed Vegetables (Potato, Cauliflower, French Beans, Carrots),
1/2 cup Tomato Puree 3/4 cup Coconut Milk,
1/2 cup grated Coconut,
4 Chopped Green Chillies Curry Leaves,
1 & 1/2 tbsp Tamarind Paste,
1 tsp Garlic Paste,
1 tsp Coriander Powder,
1/2 tsp Cumin Powder,
1/2 tsp Mustard Seeds,
1/2 tsp Turmeric Powder,
Coriander Leaves Salt,
1 big Onion Grated,
1 & 1/2 tbsp Oil,
1/2 tsp Ginger Paste
Method
– Put oil in a heated pan, add mustard seeds to it.
– Once the mustard seeds starts crackling, put curry leaves in it and stir fry.
– Add the grated onion and saute the onion for about a minute.
– Now add garlic paste, ginger paste and fry the whole mixture till its light brown in color.
– Add the green chillies, tomato puree and mix everything well.
– Add cumin seeds, coriander seeds, turmeric powder, tamarind paste and cook all of these ingredients together for about 4/5mins.
– Add 1/2 cup of water and cook it in low flame for few mins
– Add the coconut milk and mix well.
– Add salt and grated coconut and steamed vegetables and stir to mix everything well.
– Add some more water and coriander leaves to garnish and the dish is ready to be served.
