Ingredients
Flour- 1 ½ cup
Baking Soda – 1tsp
Baking powder -2 tsps
Condensed milk – 3/4th cup + 1tbsps
Buttermilk – 3/4th cup
Oil – 1/3rd cup
Cinnamon – tsps
Nutmeg – 1/2tsps
Castor Sugar – ½ cup
Brown sugar – ½ cup
Grated carrot – 1 cup (can add more upto 2 cups)
Raisins – handful (soaked with water for an hour) Baking 10 mins at 200 160- 30 mins
Hung curd – 1cup
Method
– Pre heat the oven at 200 degree celcius. Butter a 10 inch rectangular baking tin
– Sift flour, Baking soda, baking powder in separate bowl.
– Whisk together condensed milk, buttermilk, sugar, oil and spices (nutmeg, cinnamon)
– Mix this with the dry ingredients
– Finally mix grated carrot and raisins (without water)
– Scrap butter in the prepared tin and bake at 200 degree celcius for 10 minutes. Then further at 160 degree celcius for 30 minutes until baked
– Remove from the oven, let it cool down in the mold for 10 minutes. Demold and cool it off on a rack.
– Serve with lightly whipped hung curd (if sour, add bit Castor sugar and whisk)
