1 inch Galangal (peeled & chopped)
1½ inches Ginger (peeled & chopped)
3 Green Chillies (chopped)
1 Onion (chopped)
½ cup Coriander Leaves (chopped)
½ cup Thai Basil Leaves
1 Kaffir Lime Leaf (handtorn)
1 tsp White Vinegar
Salt (as per taste)
For the Curry:
2 cups Coconut Milk (divided, with 1 tsp Corn Flour mixed into 1 cup)
¼ cup Red & Green Bell Peppers (diced)
4-5 Baby Corns (sliced)
100 gms Broccoli (cut into florets)
10-12 Button Mushrooms (quartered)
2-3 Kaffir Lime Leaves (handtorn)
2 tbsp Oil (divided)
