Ingredients
Ingredients:
1½ cups – Steamed Basmati Rice
1½ tbsp – Red Chilli Oil (flavoured)
2 tbsp – Fresh Coconut (grated)
1 – small Cucumber (sliced)
½ – Onion (julienned)
¼ cup – Mint Leaves (hand torn)
5-6 – Fried Red Chillies (crushed)
zest of 1 Lemon
juice of ½ Lemon
1 tsp – Dark Soy Sauce
¼ cup – Roasted Peanuts (crushed)
6-8 – Cherry Tomatoes (halved)
¼ cup – Red Cabbage (shredded)
¼ cup – Spring Onion Greens (chopped)
¼ cup – Assorted Bell Peppers (julienned)
Salt (as per taste)
Lettuce Leaves (as required)
Crushed Peanuts (for garnishing)
Spring Onion Greens (for garnishing)
Fried Red Chilli (for garnishing)
Ingredients for the Flavoured Oil 👇
1/4 – cup Any Neutral Oil
1 tsp – Red Curry Paste
3 – Kafir Lime Leaves, Torn
1 inch – Stalk Lemongrass, Bashed
1 inch – Piece Galangal, Bashed
Note – Heat all this together for precisely a minute and keep aside to cool down completely.
