Ingredients

3 Coconuts, freshly grated
1½ cup Sugar
½ cup Milk + ¼ tsp. Yellow Food Colouring
1½ tbsp. Homemade cream (Malai)
½ tsp. Cardamom powder
¼ tsp. Rose essence
Silver foil

Method

1. Mix the freshly grated coconuts with sugar and keep aside for 60 minutes.
2. Add the coloured milk to this followed by malai and keep stirring in one direction on a medium flame for 12-14 minutes.
3. Once the moisture dries out, turn the flame off and add cardamom powder, rose essence and mix well.
4. Place the mixture on a geased tray and flatten it with a greased flat bottomed bowl.
5. Make cube shaped cuts and garnish with silver foil.
6. Let it set for 60 minutes at room temperature before unmoulding.
Delicious Coconut Barfi is ready to eat!
