Ingredients
1 tbsp. butter,
2 cloves chopped garlic,
2 medium potatoes – peeled & cut Into pieces,
1/4 cup fresh basil,
2 cups water,
2 tbsp. cashew nuts – ground,
1tsp. lime juice,
salt & pepper to taste
Method
– In a pressure cooker, heat the butter and add the chopped cloves of garlic and stir well.
– Add the potatoes and few basil leaves and stir well.
– Add the water and close the lid of the pressure cooker.
– Wait for 2-3 whistles so that the potatoes are well cooked.
– Open the lid and then using a hand blender, blend all the ingredients well.
– Add the powdered cashew nuts, salt, pepper and lemon juice and mix it well.
– Tear in few basil leaves on the top.
– Pour the soup in a bowl and keep it in the refrigerator to cool down.
– Serve chilled.
