Ingredients – Veg Chettinad Biryani
2 tbsp Oil
1 tbsp Ghee
1 tsp Fennel Seeds
½ inch Cinnamon Stick
3 Bay Leaves
2 cups Onions (sliced)
1 tbsp Ginger-Garlic & Green Chillies (crushed)
1 cup Tomatoes (sliced)
1 tsp Red Chilli Powder
½ tsp Turmeric Powder
Salt – to taste
¼ cup Curd
1 cup Mixed Vegetables (carrots & green peas)
1½ cups Button Mushrooms (diced)
Coriander Leaves (chopped) – as needed
1 cup Thin Coconut Milk
3–4 cups Parboiled Basmati Rice
