Ingredients

500 gms Arbi pressure cooked with 1 tsp. Ajwain (Carom seeds) and 2 Mangosteen (Kokum) petals or tamarind. Peeled, sliced and kept aside.

For the Masala:-
3 tbsp. Coriander powder
1 tbsp. Red chilly powder
1 tbsp. Cumin powder
1 tsp. Rock salt
½ tsp. Salt
1 tsp. Fennel powder
½ tsp. Raw mango (Aamchur) powder
2 tbsp. Rice flour
6 tbsp. Oil for frying

For the Tempering:-
1 tbsp. Oil
1 tbsp. Sesame seeds
1 sprig curry leaves
2 Dry Red chillies
1 tsp. Mustard seeds
½ cup Shallots

For the Topping:-
¼ cup Fresh coriander leaves
¼ cup Coconut, grated
1 tbsp. Lemon juice

Method

Method:-
– Mash the sliced Arbi with oil greased palms.
– Sprinkle the masalas from the masala ingredients on the mashed Arbis.
– Heat oil in a pan and fry the Arbis flipping over every minute until golden brown on both sides.
– Transfer to an absorbent kitchen paper.
– Heat oil in a wok and mustard seeds, shallots, dry red chillies, carom seeds, curry leaves, sesame seeds and fried Arbi to it.
– Toss carefully and add grated coconut and lemon juice.

Arbi Masala Fry is ready to eat!
