Ingredients
Plain 2 cups refined flour
2 tbsp oil
1/4 cup yogurt
1/4 tsp baking soda
1/2 tsp Salt
1 tsp sugar Coriander leaves
Water as required Aloo
1 cup Boiled, peeled and grated potatoes
1 tbsp chilli flakes
1 tbsp coriander powder
1/2 tsp salt
2 tbsp coriander leaves For shortcrust
2 tbsp butter
2 tbsp flour
Method
Method Plain Kulcha
– In a bowl add refined flour, yogurt, refined oil, baking soda, salt and some fine grain sugar
– Mix everything properly.
– Add water and start kneading the dough.
– Place oil in board and knead the dough over it for 10-15 minutes
– Place dough in the bowl and cover it with the damp cloth and let it rest for an hour.
– Apply little oil to the dough and cut it into medium size balls
– Apply little bit of water over it
– Dab it on freshly chopped coriander and then roll it into a thick chapati
– Heat the pan and place the kulcha on it
– Dry roast it for 45 seconds on both the sides.
– Plain Kulcha are ready Aloo Kulcha
– Apply butter and sprinkle flour over the dough
– Fold up the dough and start rolling it – Divide dough into equal portion
– In a bowl add boiled and grated potatoes,chopped coriander, coriander powder, crushed chillies and salt as required.
– Mix the stuffing properly
– Divide it into two round balls
– Fill the ball of dough with the stuffing and seal it properly
– Apply oil on surface and dab the dough lightly and start rolling
– Dry roast the kulcha for 30 seconds on both the sides.
– Just before taking it out of the pan add some oil.
Aloo Kulcha is ready to be served.
