Ingredients
For Boiling the Chickpeas:
250 gms Chickpeas (soaked overnight)
Water (for boiling)
2 tsp Tea Powder
1 Star Anise
1 Black Cardamom
4–5 Cloves
5–6 Black Peppercorns
1 inch Cinnamon Stick
5 Green Cardamoms
½ tsp Baking Soda
2–3 Bay Leaves
For the Masala:
2 tbsp Ghee
½ tsp Carom Seeds (Ajwain)
1 tsp Ginger (chopped)
1½ tsp Green Garlic (chopped)
1–2 Green Chillies (chopped)
1 cup Onion Paste
Salt (as per taste)
2 tsp Red Chilli Powder
2 tsp Coriander Powder
1 tsp Black Pepper Powder
1 tsp Cumin Powder
1 tsp Raw Mango Powder (Amchur)
½ tsp Turmeric Powder
1 tsp Garam Masala Powder
Reserved Chickpea Stock (as required)
For Finishing:
Dried Fenugreek Leaves (Kasuri Methi)
Fresh Coriander Leaves (chopped)
2 tsp Dried Pomegranate Seeds (Anardana)
For the Tadka:
2 tbsp Ghee
Ginger Juliennes
2 Small Onions (roughly cut)
2 Green Chillies (slit)
1 Tomato (quartered)
Salt (as per taste)
1 tsp Red Chilli Powder
Fresh Coriander Leaves (chopped)
For Garnish:
Ghee (for drizzling)
