Ingredients
2 pairi mangoes (any sour variety, if unavailable),
1 alphonso mango (any sweet variety, if unavailable),
3 cups water,
2 tbsp. yogurt,
3 tbsp. chickpea flour (besan),
2 tbsp. ginger chilli paste,
salt to taste,
sugar to taste,
pinch of asafoetida
Tempering-
2 tbsp. oil,
1/2 tbsp. mustard seeds,
2 whole red chillies,
few curry leaves,
2 green chillies split,
1 tsp. red chilli powder,
2 tsp. coriander powder
Method
– Gently roll the mangoes to loosen the pulp
– Cut and remove the pulp in a bowl
– Take 3 cups of water in a bowl. Add the seeds of the mango and rub to remove the pulp from the seed.
– Add yogurt, chickpea flour & ginger chilli paste.
– Mix well. Keep aside.
– Heat oil. Add asafoetida, mustard seeds.
– When they splutter, add curry leaves, whole red chillies.
– Immediately add the mango mixture and stir till it boils.
– Add salt and sugar to taste.
– Serve hot with boiled rice.
