How To Make Ghevar | Diwali Special Recipe | The Bombay Chef – Varun Inamdar

Ingredients

For the dessert:
1 cup + 2 tsp refined flour (210 gms)
3 cups (600 ml) water
3 tbsp melted ghee
1 tbsp cornflour
1/2 tsp soda bi carbonate

For sugar syrup:
2 cups grain sugar
1 cup water
1 tbsp milk
1 tbsp Rose water

For frying:
2 cups ghee
For garnish Almonds Pistachio
Silver varq Rose petals

Method

– In a bow add some melted ghee and whisk it until it turns creamy
– Add corn starch and cream it well
– Add first batch of refined flour mix it well and add some water continue whisking
– Add second batch of refined flour and mix well and add water and continue whisking until it becomes nice and even
– Continue doing so with the third batch
– Add baking soda and mix it well
– Heat a pan add sugar and water and mix it well and allow the sugar to melt
– Add milk into he syrup and let it bubble nicely
– Take off the impurities which were on the top of the surface and transfer into another bowl
– Check if the syrup has reached the desired consistency
– When the syrup is done add rose water and turn off the flame
– In a saucepan add some ghee and once it heats up transfer it on another burner and let it heat it up
– In a vessel add a small round shape vessel and pour the ghee into it until it is half submerged
– Keep the gas on high flame and let the ghee heat up
– Later lower the flame and then spoon by spoon add the batter into the ring
– Once it gets light brown in color add the ghee over it
– Pick the ghevar up and transfer it in sugar syrup and keep it for 30 seconds
– Then place it on a plate
– Garnish it with, Almonds, Pistachio ,Silver varq and Rose petals
– Ghevar is ready to be served.
