Ingredients

250g small brinjals
1 tsp mustard seeds
1/2 tsp asafoetida
1 tsp garlic grated
1 onion chopped
3 medium sized potatoes chopped
1/2 a cup of water
Mixture- 2 cups of grated coconut
1/2 a cup of coriander leaves,
chopped 1 tbsp peanuts,
ground coarsely
1/4 tsp turmeric powder
1 tsp coriander & cumin seed powder
1/2 tsp red chilli powder
1/2 tsp amchur or raw mango powder
1 tsp sugar
Salt to taste

Method

Cut the brinjals into half. Heat oil in a pan and add mustard seeds, asafoetida, grated garlic, onion and saute for a minute. Then add the brinjals, potatoes, salt, water and cover the pan with a lid and let it cook on low flame till the brinjals and potatoes are cooked.
Dry Mixture:- In a bowl mix grated coconut, coriander leaves, peanuts, turmeric powder, coriander and cumin seed powder, red chilli powder, raw mango powder, sugar and salt. Add this mixture to the cooked brinjals and potatoes. Stir well and add water as required. Cover with the lid and simmer for a minute. Tasty Baingan Aloo is ready to be served!
