Ingredients
• 1 whole Eggplant (cut into Baton-size pieces)
• 2 Potatoes (cut into Baton-size pieces)
• 2 Onions (diced)
• 3 Tomatoes (diced)
• 1 Sliced Tomato
• 1 tsp Chopped Green Chillies
• 2 tsp Garlic-Ginger Paste
• Coriander Leaves (chopped & for garnishing)
• Water (as required)
For Tempering:
• 1 tbsp Oil
• ½ tsp Asafoetida
• 1 tsp Cumin Seeds
• ½ tsp Carom Seeds
Spices & Seasonings:
• 1 tsp Red Chilli Powder
• ½ tsp Turmeric Powder
• 1 tsp Coriander Powder
• 1 tsp Garam Masala Powder
• 1 tsp Raw Mango Powder (Amchur)
• 2 tbsp Tamarind Pulp
• 3 tsp Chopped Jaggery
• 1 tbsp Ketchup
• 1 tbsp Hot Sauce
