Dhansak is a combination of Persian and the Gujarati cuisine. It is usually made by cooking mutton with lentils and vegetables but here, Ruchi is up with the vegetarian version of Dhansak.

Ingredients

1 cup tuvar dal
2 tbsp masur dal
2 tbsp chana dal
2 brinjals
100g pumpkin
1 cup fenugreek leaves
3 potatoes
2 onions
7-8 cloves garlic
2 inch piece ginger
2 chillies
1 tsp garam masala
1/2 tsp red chilli powder
1/2 tsp turmeric powder
1 tbsp coriander cumin seed powder
1 tsp cumin seeds Brown Rice-
1 tbsp ghee
1 tsp cumin seeds or jeera
1/2 cup rice
Salt to taste
1 1/2 cups of water

Method

To make the tempering:
– Heat oil in a pan.
– Once the oil is hot, add the cumin seeds,
– Ground ginger, chilli and garlic into a coarse paste and add it to the oil.
– Saute the ingredients well.
– Add the chopped onions and cook them until they are brown.
– Add the chopped tomatoes and saute well.
– Add turmeric powder, coriander and cumin seed powder, red chilli powder, salt and the dhansak masala and mix well.
– The masala mix is ready.

To make dhansak:

– In a pressure cooker, add the pigeon peas (toor dal), gram dal (chana dal), masoor dal, chopped pumpkin, half chopped aubergine (baingan), big pieces of potatoes, chopped fenugreek leaves, salt, turmeric powder and water. Cover the pressure cooker with a lid and give it atleast 4 – 5 whistles.
– Once done, let it cool down slightly.
– Open the lid of the cooker and stir the ingredients well.
– Take out a few potato pieces from the mix and keep them aside.
– Add the masala mix to the dals in the pressure cooker.
– Using a blender, blend all the ingredients well.
– Add little water to get a dal consistency.
– Chop the potatoes roughly (ones kept aside earlier) and add them to the dhansak. Mix well.
– Since we’ve added water, let us boil the dhansak. Cook it until it comes to a boil.
– The dhansak is ready.

To make rice:
– Heat oil in a pan. Add sugar to it and let it melt. Make sure that you do not stir until it melts.
– Once the sugar melts, add the rice to it. Also ad water.
– Add salt to taste.
– Cover the rice and let it cook.
– One done, open the lid and stir the rice.
– The caramelized brown rice is ready to be served.

To plate:
– Serve the delicious looking brown rice along with the delectable dhansak.
